Burrata Sandwich

Instructions
1. Brush olive oil on either side of the bread and toast it on a skillet over medium-high heat
2. Put some olive oil in a pan. Add the tomato slices, some salt, and basil. Fry until the tomatoes begin to soften/caramelize (~5 min over medium heat).
3. Toss arugula with some olive oil and a squeeze of lemon, and season with flaky salt and black pepper.
3. Spread pesto on the bread. Assemble the other ingredients into the sandwich. Drizzle some balsamic vinaigrette over the arugula.
Ingredients
  • 2 slices of good bread (like sourdough, not like wonder bread)
  • A blob of burrata
  • 1 tomato, sliced
  • Basil, either fresh or dried
  • A few slices of prosciutto
  • A handful of arugula
  • 1 lemon
  • Pesto
  • Balsamic vinaigrette
