chinese eggs with tomato
Instructions
1. crack and beat eggs
2. pour eggs + oil into a frying pan and scramble them until soft / about a minute away from being done
3. move eggs to another bowl
4. cut each tomato into slices (~6 slices for a medium sized tomato, and more if it's huge)
5. pour a bit of oil into a frying pan and fry the tomato slices over medium heat. salt the tomatoes so they'll leak more juice. if the tomatoes are not super ripe, add a few pinches of sugar.
6. in the meantime, cut your green onion into small chunks.
7. once the tomato skins start peeling, pour the eggs back into the pan, add green onions, and stir for about another minute
8. add garlic salt to taste
9. serve with a side of rice!
