Instant Salsa Chicken
Instructions
1. Place chicken in Instant Pot.
2. Pour salsa over the chicken.
3. Add just enough water or chicken broth to barely cover the chicken, if needed.
4. Add optional spices such as cumin, onion powder, bay leaves, or tomato paste. Mix everything a lil bit.
5. Cook at High Pressure for 8 minutes with slow release (aka do not flip to venting after done, just wait like 10 minutes). If frozen chicken, cook for 12 minutes.
6. Shred the chicken using two forks and mix well with the salsa mixture.
7. Put in frozen veggies, if you have them. Cook with Saute option for like 5 minutes.
8. Top with cheese, eggs, or any other desired toppings. Serve with rice.
