Vegetarian Chickpea Curry

Instructions
1. In a large skillet, heat coconut oil over medium heat. Add chopped onion, minced garlic, and grated ginger; sauté until softened.
2. Stir in curry powder, cumin, coriander, and turmeric; cook for 1-2 minutes.
3. Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and let it cook for 15-20 minutes.
4. Season with salt and pepper to taste.
5. Garnish with fresh cilantro before serving.
Notes
- Serve the curry over rice or with naan bread.
- Adjust the level of spiciness by adding more or less curry powder.
